The overview

A buffet with an actual chef behind it

Buffets get a bad name from lukewarm trays and soggy salads. Ours work because a chef runs the line: dishes rotate in small batches, stations restock before they empty, and everything on the table was finished within the hour.

This is the workhorse of our big-event book: club presentations, community fundraisers, school formals, church gatherings and 200-plus family reunions. High volume, no drop in standard.

The process

How a big buffet runs

Feeding 300 people well is a logistics problem we happen to enjoy.

Kitchen team preparing buffet trays in commercial kitchen
Step 01

Numbers and layout

Guest count, room shape, how people will move. A good buffet is designed around the room, not just the menu.

Step 02

Menu built for volume

Dishes chosen for how they hold and serve at scale. Nothing on the line that can't survive 20 minutes beautifully.

Step 03

Kitchen prep day

Most prep happens at our Aberfoyle Park kitchen the day before. On-site time stays short and clean.

Step 04

Line setup

Stations placed for flow, signage up, hot gear running. First plates hit the table exactly when you said they would.

Step 05

Managed service

Staff work the line, rotate dishes, clear tables and quietly restock. The buffet looks full from first guest to last.

Step 06

Pack down and out

Stations down, hall swept, leftovers boxed for whoever you nominate. Schools and charities usually get them.

Who you'll get

The buffet crew

Volume catering is a team sport. This is the team.

Exec chef

Designs every buffet menu for how it actually behaves on the line, not how it looks on paper.

Line lead

Owns the rotation clock. If a tray ever looks tired for more than a minute, that's on him and he knows it.

Questions

Buffet questions

Asked by every committee we've ever worked with. Call +61 3 9517 2843 or use the contact page.

Small batches and a rotation clock. Dishes come out in 20-minute cycles straight from our hot boxes, so nothing sits long enough to die. The last guest eats the same food as the first.

Most community halls have a domestic kitchen at best, and that's fine. We do the real work at our own kitchen and use yours for finishing and holding.

With three stations, everyone is through in about 40 minutes. Single-line buffets take longer; we'll recommend stations whenever the room allows it.

At cost, often. We've done 40+ fundraisers on a cost-recovery basis. Mention it's a community event when you enquire and we'll tell you honestly what we can do.

Boxed and handed to whoever you nominate. Plenty of our community events send them to a shelter or back to the volunteers.
